• 1/2 lb. Mendolia's Italian Sausage (per person)
• 1/2 Green (or mixed colors) Bell Pepper (per person)
• 1/2 Medium Onion (per person
• Mushrooms to taste (fresh or canned)
• 1 Medium Potato (per person)
Cut peppers and onions into eighths. Cut mushrooms into pieces not smaller than quarters. Remove skin from potatoes and put in a large open baking pan with sausages. Bake uncovered for 15 minutes at 400ºF. When sausage begins to brown, turn sausage and potatoes. Add peppers, onions and mushrooms, cover and bake an additional 15 minutes at 425ºF. Uncovered, bake for 5-10 minutes more, remove from oven and serve.
Note: If after first 15 minutes there is more juice than desired, remove excess liquid.
